Day 3: On your plate
Say hello to ham and cheddar corn muffins.
These lovelies will be on my plate tomorrow morning for breakfast.

I have a love of all things baked for breakfast. Baked goods of any kind are my breakfast food of choice. Muffins, bagels, english muffins, french toast, coffee cake. Yes, please, to any and all!
I’m trying hard to eat healthier, so I was pretty psyched to find this recipe. I’m on a muffin kick right now–last week, I tried these zucchini chocolate muffins and they were pretty darn wonderful.
I’m optimistic that ham + cheddar + cornmeal + whole wheat flour means they will stick with me longer than the usual muffin. If they taste as good as they smell, I may not be forced to abandon my morning baked goods for something healthier. Here’s hoping.
